Matzoh Ice Cream with Chocolate Covered Matzoh Pieces

Here’s the matzoh ice cream fresh from the churn. The matzoh added a great cracker flavor to the milk and I had to play with the amount of salt and sugar until I had a mixture that satisfied. While the ice cream does taste like matzoh (moreso like buttered matzoh), I would add more sugar to the base next time as the chocolate matzoh pieces didn’t contribute as much sweetness as I’d hoped they would. However, I’m going to serve it with some dark chocolate shavings to try and balance everything out. As it stands now, when you get a bite of everything with a significant amount of chocolate covered matzoh it’s very good - a novelty flavor, sure, but for a first go I’m feeling like a regular Mister Softee (and not just because of my erectile dysfunction). The recipe follows.
Matzoh Ice Cream with Chocolate Covered Matzoh Pieces
1 1/2 cups of matzoh milk (soak matzoh pieces in 2 cups of milk overnight)
3 cups heavy cream
2 cups crushed chocolate covered matzoh pieces
salt and sugar to taste
Strain the matzoh milk through cheesecloth into a mixing bowl. Whisk together matzoh milk and 3 cups of heavy cream, and salt and sugar to taste. Throw it in your ice cream maker (this recipe is for 2QT machines). As the ice cream firms up (about 15-20 minutes) slowly pour in the crushed chocolate covered matzoh pieces until thoroughly mixed through. Put into containers and freeze for a minimum of two hours, during which you can pour yourself a glass of passover wine and tickle Elijah’s fabled beard.
